Flavor & Winemaking: It’s like eating fruit, mostly berries, in a forest. But fruit that gets you drunk. So you end of feeling sort of like a drunk bear. Blackberry, mulberry, black cherry, fig fruit flavors are followed by rich espresso & dark chocolate-vanilla notes. Peppery spice (peppercorn medley, roasted red bell pepper, clove) and deep notes (cedar, tea leaves, roasted meat & mushrooms) give a broad and complex finish. This Cabernet was fermented with 25% whole cluster and aged on cedar & hickory woods to enhance the grape’s spicy notes.

  • Sensory Notes

It’s like eating fruit in a forest. But fruit that gets you drunk. Blackberry, mulberry, black cherry, fig fruit flavors.

  • Winemaker Notes

Foothills Cab fermented with 25% whole cluster to enhance spicy notes, then aged on maple, hickory, cherry, whiskey wood, cedar, and cypress to enhance the spicy & foresty depths of this wine.

Cabernet Sauvignon. Originating in the Bordeaux region of France, it is the backbone of the world’s most expensive wines and is the most popular red wine worldwide. This is largely due to its incredibly intensity of flavor and natural complexity: it shows dark fruit but also a natural spice & foresty note. I did my best to enhance this natural character with whole cluster fermentation (adds spice & herbaceous notes) and aging on the spicier, woodsy woods (cedar, cypress, hickory especially). Cabernet Sauvignon is the lovechild of Cabernet Franc & Sauvignon Blanc.

  • Vineyard Notes

    Cedarville Vineyards, Sierra Foothills

    Soil: Volcanic Clay Loam

  • Food Pairing

Cheese pairs wonderfully with this because the creaminess of the cheese softens to tannic dryness of the wine; this is similar to why we add milk or cream to a bitter black tea.  Steak, venison, lamb. Grilled mushrooms, bbq, stuffed peppers. Fajitas (skirt steak, peppers & mushrooms). Philly cheese steak. Chili Verde. Burrito with “sofritos.” Anything involving pepper notes (bell pepper, jalapeno, or black pepper), jalapeno poppers. Anything smoked. Darker meats & sauces. Manchego: The deep creaminess of this cheese cuts the weight of the wine and makes it smoother, while also having a funkiness to the cheese that plays off the funky-foresty notes of the wine. Raw milk cheddar: the wine has an acid-tannin-alcohol BIGness, fullness, almost sharpness, thant the cheese softens and smooths out. Asiago: The saltiness of this cheese adds to the savory richness of the wine. Bacon Cheese Burger. Combination pizza. Pasta Putanesca. Dark chocolate with cherry preserve. Fontina, parm crisps

  • Music, Life & Literary Pairings

    Art: Micah Crandall-Bear

Music Pairing: “Apple Tree” by Erykah Badu: A thoughtful song about “picking your friends like you pick your fruit,” surrounding yourself with people you admire & respect. One Chance by Modest Mouse because of the depth of thought: we live once, and living it meaningfully is powerful. Qi by Phildel, a powerful piano piece. At Home in the Dark by 9 Theory, a hypnotizing hip-hop song. Furr by Blitzen Trapper. “Little Boxes” by Pete Seeger. My dad taught me the lesson in this song; the standard life, living in boxes, is not for all of us. George Winston

Life Pairing: Getting a drink in a San Francisco Piano Bar. Building your own furniture. Riding a stallion into battle. Reading leather bound books while sitting in your armchair at your desk made of rich mahogany. Cigars & fireplaces. Christmas after eating, evening/winter.

    Literary Pairing:

"I urge you to please notice when you are happy, and exclaim or murmur or think at some point, 'If this isn't nice, I don't know what is.'" -Kurt Vonnegut

“Today you are You, that is truer than true. There is no one alive who is Youer than You.” ― Dr. Seuss, Happy Birthday to You!

“He was becoming unstuck, he was sure of that - his bones were no longer wrapped in flesh but in clouds of dust, in hummingbirds, dragonflies, and luminous moths - but so perfect was his equilibrium that he felt no fear. He was vast, he was many, he was dynamic, he was eternal.”  ― Tom Robbins, Jitterbug Perfume

“You have power over your mind - not outside events. Realize this, and you will find strength.” ― Marcus Aurelius, Meditations. Companion quote: “Life isn't about finding yourself. Life is about creating yourself.” ― George Bernard Shaw

“Everything you can imagine is real.” ― Pablo Picasso

“A human being is a part of the whole called by us universe, a part limited in time and space. He experiences himself, his thoughts and feeling as something separated from the rest, a kind of optical delusion of his consciousness. This delusion is a kind of prison for us, restricting us to our personal desires and to affection for a few persons nearest to us. Our task must be to free ourselves from this prison by widening our circle of compassion to embrace all living creatures and the whole of nature in its beauty.” ― Albert Einstein

“A human being is a spatially and temporally limited piece of the whole, what we call the “Universe.” He experiences himself and his feelings as separate from the rest, an optical illusion of his consciousness. The quest for liberation from this bondage [or illusion] is the only object of true religion. Not nurturing the illusion but only overcoming it gives us the attainable measure of inner peace." ― Albert Einstein
