Flavor & Winemaking: It’s like eating fruit, mostly berries, in a forest. But fruit that gets you drunk. So you end of feeling sort of like a drunk bear. Blackberry, mulberry, black cherry, fig fruit flavors are followed by rich espresso & dark chocolate-vanilla notes. Peppery spice (peppercorn medley, roasted red bell pepper, clove) and deep earthy notes (cedar, tea leaves, roasted meat & mushrooms) give a broad and complex finish. This Cabernet was fermented with 35% whole cluster and aged on a pinch of oak, cedar, maple, cherry, cypress & hickory woods to enhance the grape’s woodsy & spicy notes.

  • Winemaker Notes

    Foothills Cab fermented with 25% whole cluster to enhance spicy notes, then aged on maple, hickory, cherry, whiskey wood, cedar, and cypress to enhance the spicy & foresty depths of this wine. 

    Cabernet Sauvignon. Originating in the Bordeaux region of France, it is the backbone of the world’s most expensive wines and is the most popular red wine worldwide. This is largely due to its incredibly intensity of flavor and natural complexity: it shows dark fruit but also a natural spice & foresty note. I did my best to enhance this natural character with whole cluster fermentation (adds spice & herbaceous notes) and aging on the spicier, woodsy woods (cedar, cypress, hickory especially). Cabernet Sauvignon is the lovechild of Cabernet Franc & Sauvignon Blanc.

  • Food Pairing

    Cheese pairs wonderfully with this because the creaminess of the cheese softens to tannic dryness of the wine; this is similar to why we add milk or cream to a bitter black tea.  Steak, venison, lamb. Grilled mushrooms, bbq, stuffed peppers. Fajitas (skirt steak, peppers & mushrooms). Philly cheese steak. Chili Verde. Burrito with “sofritos.” Anything involving pepper notes (bell pepper, jalapeno, or black pepper), jalapeno poppers. Anything smoked. Darker meats & sauces. Manchego: The deep creaminess of this cheese cuts the weight of the wine and makes it smoother, while also having a funkiness to the cheese that plays off the funky-foresty notes of the wine. Raw milk cheddar: the wine has an acid-tannin-alcohol BIGness, fullness, almost sharpness, thant the cheese softens and smooths out. Asiago: The saltiness of this cheese adds to the savory richness of the wine. Bacon Cheese Burger. Combination pizza. Pasta Putanesca. Dark chocolate with cherry preserve. Fontina, parm crisps
