Flavor & Winemaking: Black cherry, pomegranate, & fig fruit aromatics from the Pinot Noir grape are supported by subtle cured meat & dried shiitake mushroom notes from oak barrel aging with cherry wood. A rich umami note reminiscent of teriyaki jerky or molasses smooths out the finish. Barrel aged for 8 months on 50% French & American oak, 30% cherry wood, 10% maple wood & 10% hickory wood.
